How Olive Oil Is Produced?

In KÜPYAG, which processes olives with the cold-pressed system without using any chemicals or enzymes, high quality and healthy olive oils are produced by following the processes below.

As it is known, olive oil is produced from healthy olive fruits collected from olive trees. The olive harvest should be started when the olive is rich in antioxidants and low in acidity, that is, when the green color starts to change. This first harvest is called 'Early Harvest'. Early harvest is usually done at the beginning of October, but the choice of time may vary according to the type of olive, seasonal conditions, region and altitude.

First, the olives are brought to the factory immediately after they are harvested. Afterwards, it goes through a 5-stage process and becomes olive oil.

First Stage: The olives are transferred on a moving belt system and separated from the leaves and branches, respectively, and washed with water.

Second Stage: Washed olives pass through the 'Crusher' and are crushed together with their pits and turned into olive paste.

Third Stage: The obtained olive paste is mixed for 20 minutes in the section called 'Malaksor'. This step is very important in terms of getting the oil in the olive paste better. The temperature of the malaxer system should not exceed +27 degrees. With this method called 'Cold Press', the vitamins, minerals, antioxidants and polyphenols found in olives are transferred to olive oil without any loss.

Fourth Stage: The mixed olive paste is sent to the centrifuge system called 'Decanter' by means of a pump, where olive oil and olive pulp are separated. While this olive oil is sent to the separator for fine filtration, the olive pulp is sent to the waste pond and then to the licensed pomace facilities.

Fifth Stage: Olive oil is purified from small-sized olive pulp by passing through the Separator. Natural olive oil, obtained by purely mechanical methods, is stored in chrome and stainless storage tanks without exposure to sunlight, and then directed to the filling line.

The harvest made when the green color of the olives starts to change is called 'Early Harvest'. Olive oils obtained from olives collected during this period generally contain low oleic acid (such as 0.2-0.3%) and high polyphenols.
